Day 4: More Pancake Fun

So this post has nothing to do with Down syndrome, but I've had it queued in my post list for a week now.  Figured it was a good a time as any to put it up.  :-)
I've suddenly decided to become a bit of a real mom on the weekends, occasionally cooking real pancakes for Samantha.  If you recall, I rarely cook anything.  Pancakes are definitely her favorite breakfast food, and obviously, in the interest of a hasty exit for school every morning, we buy the frozen variety (please don't judge me!).

A few months ago, when I was doing my series about the nutritional value of cereal as a breakfast food for kids, I discovered how incredibly nutrient-rich Cheerios are.  Like, seriously, I was blown away by it.  Just take a look at the info on the side of a box the next time you go to the grocery store, and you'll see what I'm talking about.  Also, back then, I decided to experiment and see if I could incorporate Cheerios into pancakes.  I posted a recipe that I had modified, involving crushed Cheerios as a substitution for half of the flour, and they turned out delicious

So I made them again (minus the blueberries, as I couldn't plan far enough in advance to actually thaw the ones in my freezer) on Saturday morning, with a teensy bit of help from Samantha.  Really, she was more than willing to help at the beginning, but then got tired of rolling out the cereal and wandered back into the living room to go read a book.  It doesn't take long, but I think she thought we'd just be measuring and pouring - far more interesting, I guess...


It doesn't have to be uniformly powdery.  Some larger bits are okay.






Oops!  Used a shallow, lightweight aluminum pan, and got this sticky result.

Much better!  Heavier pan.  Golden, stick-free.

I just wanted to say I loved the layout of this post! The way you arranged the pictures looked cool...And now I want pancakes!! lol

They look great, oh and I use frozen blueberries in my pancake batter, that way they don't get all smushed up and while the pancake cooks they defrost. Perfect!

guess what I discovered!! pancake balls...they are so fun and the kiddos love them!! thought maybe you and Sammi would to! and they freeze GREAT! smiles

Wow, these look awesome! I love that you included the boo boos too. I suck at making pancakes but I will not give up....all due to your inspiring recipe. I'm also glad you mentioned you don't cook anything. I often feel like such a bad mom for not cooking more. To be honest I love to cook, I just always feel rushed. Thanks for this post! =)
